The Tenzan 'Shichida Aiyama Hiya-Oroshi' is a seasonal Junmaishu (pure rice sake) released in the autumn, usually from September. Hiyaoroshi is a style of sake that has been pasteurised once after pressing in the spring and then matured over the summer before being shipped in the autumn without a second pasteurisation. This process allows for maturation over the summer, which mellows the flavour, resulting in boosted umami and a balanced, less hard-edged profile. It is a Junmai sake with a polishing rate of 75%. The name '75' refers to this ratio, as the brewers intentionally do not over-polish to respect the soft mouthfeel of the Aiyama sake rice, which is the variety used and is produced in Hyogo Prefecture. Sensory notes include a refined sweetness and the acidity of the popular Aiyama rice. It has an elegant aroma of white flowers, followed by notes of white peach and yellow apples. Other flavours include ripe grape, a rich sweetness, cashew, cream, and fig notes. It is described as luscious with a hint of sweetness, featuring a soft and plump mouthfeel, and a style of rich-dryness. Recommended serving temperatures are 1 5 ∘ C to 2 0 ∘ C ( 3 8 ∘ C to 4 2 ∘ C is also suitable).
