This spirit is a Tequila Blanco from Mexico, specifically the region of Jalisco, in the subregion of Amatitán (often referred to as the Tequila Valley/Los Valles). The brand, Amatiteña, is named after the town of Amatitán, Jalisco, known as "The Cradle of Tequila". The tequila is made by fifth-generation maestro tequilero Don Alberto Partida, who continues his family's legacy while championing the use of exclusively historical and ancestral distilling methods that predate the mid-19th century. Amatiteña is a single estate tequila, made with 100% Blue Weber agave ( Agave tequilana ) grown on the Partida family's land. Amatiteña Tequila Blanco is a testament to the complex flavour of meticulously crafted agave spirit. It is double distilled in historical 19th-century alembic copper pot stills and is bottled at 42% ABV (84 proof). Colour: Crystal bright with silver hues. Aroma: The aromas are powerful, sweet, and intense. Notes include cooked agave, intense smoke, lemon/lime citrus, and a fresh minty note. An herbal medley of lemon thyme, sage, and dill is present, along with black and green peppercorns, earthy minerals, and a growing level of smoke. Palate: The texture is thick, strong, and has a large body. The flavour is a vibrant and clean experience, showcasing bold fruit notes, caramel, smokey honey sweet agave, warming pepper heat, assertive spices, and anise. Subtle notes of purple flowers, fresh vanilla bean, dried dates and figs, and a persistent pulse of salinity also appear. Body and Finish: The overall profile is stunning and formidable. The finish is round, warm, and balanced, fading away slowly and satisfyingly with a savoury white pepper on the end. Production Methods: The piñas are cooked in a rare, traditional stone oven over mesquite wood fire, a method that predates the steam ovens common today. The cooked agave is then milled using a stone tahona wheel. Fermentation occurs with the agave fibres ( bagasse ) in open air wood tanks ( tinas ), using ambient yeast and water from an ancient spring, making each batch a unique expression of terroir .
