His estate, founded in 2001, is dedicated to non-interventionist methods that respect the land’s volcanic terroir. Cornelissen’s philosophy is to allow nature to guide the process, producing wines that are pure expressions of Etna’s unique soils and microclimate. Wine Description This wine is a blend of Grecanico Dorato and Carricante grapes, grown on volcanic soils at elevations of 620–750 metres. It pours a golden yellow colour with slight amber reflections from its short skin contact. Aromas reveal citrus, stone fruit, dried herbs, and saline minerality, alongside subtle notes of resin and ginger. On the palate, it is textural and savoury, with layers of apricot, pear, and citrus zest balanced by firm acidity and a gentle tannic grip. The body is medium to full, with a long, mineral-driven finish. Food Pairing The wine’s structure and savoury character pair beautifully with seafood, poultry, creamy pasta dishes, and Sicilian classics such as carbonara.
