Dominique Laurent developed his taste for only the finest of flavors as the son of a French pastry chef. While apprenticing with his father, he began to blend his appreciation of food with fine wine and opened a small wine shop in Nuits-Saint-Georges. It did not take long for this business to evolve into a unique, full-time negociant business. Dominique selects exclusively the finest appellations and old vine cuvees from the top producers in Burgundy, regardless of price. Having worked with many of the growers for several vintages, Dom is able to have the grapes prepared and vinified to his specifications from the outset of the harvest. The character of the wines is magnified and intensified through long elevage on the lees in Laurent’s cellars. The oak barrels, many of them new, are made by Laurent in his own cooperage. These “magic barrels, as Dom refers to them, are also being sold to other top winemakers in Burgundy and elsewhere. Because of the careful oak selection from very old forests, its curing and slow, medium toasting, the wines are enhanced and their fruit preserved without being marked by crude wood flavors or bitter tannins. Laurent believes that wines must find their own equilibrium, so instead of following a given recipe, he tastes each wine as it evolves and makes adjustments according to each vintage and appellation. He adds only a minimum amount of sulphur, preserving the wines in their most natural state. He does not filter, and in certain years, does not rack them either. Dom views his methods as a return to the “golden age of Burgundian winemaking practiced in the first half of the 20th century as opposed to a modern innovation or fashion. Above all, each vintage, each cuvee, each barrel is treated as an individual and the elevage is adjusted sensitively to bring out its unique qualities. In a relatively short time, Dominique Laurent made a name for himself in the Cote d’Or and was hailed as ”one of the most influential figures in wine during the last twenty years”, by Robert M. Parker, Jr. Dom’s innate sense of taste and exclusive selection of old vines from the Cote’s greatest growers have produced rich, concentrated wines, crafted with a master’s hand. His most recent venture, in partnership with his son Jean, is Domaine Laurent Pere et Fils, which began with vines in Meursault and Nuits-St. -Georges, then expanded to Gevrey-Chambertin and Clos Vougeot.
