The smooth and warming flavours present in Northland come from the unhurried way in which the spirit is made, and from the maturation, which takes place in American oak quarter casks. Matured and bottled on site, Northland represents the first chapter in the history of Wolfburn. Nose: Green pears and apples, lime and elderflower cordial, green garden herbs, vermouth like notes and all wrapped up in a subtle blanket of sooty/white pepper led peat smoke, some wasabi peas like nuance here too. Palate: All green fruit and veg (think peppers, lime and pear) also some sweetness (angelica) and oily texture with notes of aniseed, green herbs, lemongrass, green chilli and that sooty white pepper smoke. Finish: More of that green pepper and unripe apple and pear with a wasabi, green pea and sooty lime cordial tangy/smoke Jolly good for just a 3 year old malt and i look forward to trying more from this tiny independent distillery based in Thurso. 91. 5 points Jim Murray's Whisky Bible
