Wine maker notes This red wine is the product of multiple different vineyard sites around California, allowing us to employ many different techniques in the winery. A portion of the grapes were stored in stainless steel tank prior to fermentation to facilitate a process known as “Carbonic Maceration” in which the grapes begin to anaerobically metabolize sugar and acid into alcohol. We also cofermented a portion of the Grenache grapes with Viognier grapes, to promote co-pigmentation and to capture the flowery aromas of the white varietal. Yet another tank was left to macerate on the skins after the completion of fermentation. The final wine is the blend of these different lots--some of which were aged in neutral oak barrels and some of which matured in stainless steel tanks with the inclusion of Micro-oxygenation. Final blend: 91% Grenache, 6% Syrah, 3% Viognier.
