Espolòn was the life's work of master distiller Cirilo Oropeza, who spent over 50 years perfecting the science and art of tequila before founding Casa San Nicolás in the Los Altos Highlands of Jalisco in 1996 — built to his exact specifications at 2,000 metres above sea level, one of the highest-altitude distilleries in Mexico. The name means "spur" in Spanish, a nod to the rooster — a symbol of Mexican national pride — that appears on every bottle alongside the art of legendary 19th-century Mexican artist José Guadalupe Posada. Made from 100% Blue Weber agave harvested from Jalisco's "Golden Triangle," fermented to rock music that Cirilo believed inspired the yeast, and distilled in both pot and column stills.
